And Michelle, here’s the recipe:
1/2 c oats, 1 c flour, 2/3 c sugar
2 tsp cinnamon, 1 tsp baking soda, 1 tsp salt
2 eggs
1 tsp vanilla, 1 tsp lemon juice
1/3 c oil (sometimes I substitute apple sauce)
2 c grated carrot
whatever makes you happy. in this one I used almonds, coconut, and chocolate (almond joy?), but I prefer the classic walnuts and raisins.
Bake at 350, 30 min. Makes 12 muffins!
